Ingredients
1 cup aval (poha or flattened rice)
4 cups milk
1/2 cup jaggery, grated or powdered
1/4 cup ghee
10-12 cashews
2 tbsp raisins
1/4 tsp cardamom powder
Directions
- Heat ghee in a deep pan and add cashews and raisins. Sauté them for 2-3 minutes on low flame until they turn golden brown. Take them out and keep them aside.
- In the same pan, add aval and roast it until it turns golden brown. Take it out and keep it aside.
- In the same pan, add milk and bring it to boil. Add roasted aval and let it cook on low flame for 10-15 minutes or until aval is cooked.
- Add jaggery and cardamom powder. Mix well and cook for another 5-10 minutes on low flame.
- Add the roasted dry fruits and mix well. Turn off the flame and let it cool down for 5-10 minutes.
- Serve the Aval Payasam hot or chilled as per your liking. Garnish it with more dry fruits before serving.
Quick Notes
- Roast the flattened rice or aval properly until it turns golden brown to give a nice nutty flavor to the dish.
- Use fresh jaggery to get the best taste.
- Adjust the sweetness and thickness of the payasam as per your liking by adding more or less jaggery or milk.
