1 teaspoon red chili powder (adjust to taste)
1 teaspoon coriander powder
1/2 teaspoon cumin seeds
2 tablespoons oil
Salt to taste
Fresh coriander leaves for garnish
Directions
- Wash the rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
- Heat oil in a pressure cooker. Add cumin seeds and let them splutter.
- Add chopped tomatoes, green chilies, and ginger paste. Cook until the tomatoes turn soft and mushy.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Add the soaked and drained rice. Stir gently to combine with the tomato mixture.
- Add 1.5 cups of water and mix well. Adjust the salt if needed.
- Close the pressure cooker lid and cook on medium heat for 2 whistles.
- Allow the pressure to release naturally. Open the lid and fluff the rice with a fork.
- Garnish with fresh coriander leaves.
- Serve hot with raita or yogurt.
Quick Notes
- Use ripe and juicy tomatoes for the best flavor and texture.
- Soaking the rice before cooking helps in achieving fluffy and separate grains.
- Adjust the spice levels according to your taste preferences by adding more or less red chili powder.
- For added flavor, you can temper the rice with some whole spices like cinnamon, cloves, and cardamom before adding the tomatoes.
- Feel free to add vegetables like peas, carrots, or bell peppers to the rice for extra color and nutrition.
- Allow the cooked rice to rest for a few minutes before fluffing it with a fork. This helps in getting perfectly cooked grains.
- Garnish the Tomato Rice with freshly chopped coriander leaves for a burst of freshness.
- Serve the Tomato Rice with raita, yogurt, or a side salad to complement the flavors.
