  • 2 salmon fillets, skin removed

  • 1/2 cup of spinach, washed and chopped

  • 1/2 cup of ricotta cheese

  • 1 egg, beaten

  • Salt and pepper, to taste

Directions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a bowl, mix together the chopped spinach, ricotta cheese, salt, and pepper.
  • Roll out the puff pastry on a lightly floured surface, then cut it in half. Place one salmon fillet in the center of each half.
  • Spoon the spinach and ricotta mixture over each fillet, then fold the puff pastry around the salmon, making sure to seal the edges.
