Khichri is a classic Indian dish made with rice and lentils that is easy to prepare and very nutritious. This one-pot meal is perfect for a quick weekday dinner or a lazy weekend lunch. The dish is often served with a dollop of ghee or yogurt, which adds to its taste and creaminess. Ingredients

  • 1 cup rice

  • 1/2 cup split yellow lentils (moong dal)

  • 1 onion, chopped

  • 1 tomato, chopped

  • 1 tablespoon oil

  • 1/2 teaspoon cumin seeds

  • 1/2 teaspoon mustard seeds

  • 1/2 teaspoon turmeric powder

  • 1/2 teaspoon coriander powder

  • 1/2 teaspoon cumin powder

  • 1-2 green chilies, chopped (optional)

  • Salt to taste

  • Water

Directions

  • Rinse the rice and lentils in water until the water runs clear. Soak them together in water for 30 minutes.
  • In a pressure cooker or a pot, heat the oil over medium heat. Add cumin seeds and mustard seeds and let them crackle.
  • Add the chopped onion and sauté until they turn golden brown.
  • Add the chopped tomato and cook until it becomes soft and mushy.
  • Add turmeric powder, coriander powder, cumin powder, and chopped green chilies (if using). Mix everything well and cook for a minute.
  • Drain the soaked rice and lentils and add them to the pot. Mix well with the masala.
  • Add water and salt to taste. For 1 cup of rice and 1/2 cup of lentils, you’ll need about 3 cups of water.
  • If using a pressure cooker, cover the lid and cook on high heat for 2 whistles, then reduce the heat and cook for 8-10 minutes. If using a pot, cover it with a lid and cook on low heat for 20-25 minutes or until the khichri is fully cooked and the water has been absorbed.
  • Serve hot with some ghee or yogurt on top, if desired. Enjoy!
