Ingredients

  • Litti
  • 2 cups wheat flour

  • 1 cup Sattu (roasted gram flour)

  • 1 teaspoon carom seeds (ajwain)

  • 1 teaspoon salt

  • 2 tablespoons ghee

  • Water (as needed)

  • Brinjal Chokha
  • 1 large brinjal (eggplant)

  • 2 medium-sized potatoes

  • 2 onions, finely chopped

  • 2 tomatoes, finely chopped

  • 3-4 green chilies, finely chopped

  • 4-5 cloves of garlic, minced

  • 1-inch piece of ginger, grated

  • 2 tablespoons mustard oil

  • Salt to taste

  • 1 teaspoon red chili powder

  • 1 teaspoon turmeric powder

  • Fresh coriander leaves for garnishing

Directions

  • To prepare the Litti dough, in a mixing bowl, combine wheat flour, Sattu, carom seeds, salt, and ghee. Mix well.
  • Gradually add water and knead to form a firm and smooth dough. Cover it and let it rest for 15-20 minutes.
  • Meanwhile, prepare the Chokha. Place the brinjal and potatoes directly on the gas stove flame and roast them until charred and cooked through.
  • Remove the brinjal and potatoes from the flame. Peel the skin off the brinjal and mash it well in a bowl.
  • Peel the skin off the potatoes and mash them separately.
  • In a large mixing bowl, combine the mashed brinjal, mashed potatoes, chopped onions, chopped tomatoes, minced garlic, grated ginger, chopped green chilies, mustard oil, salt, red chili powder, and turmeric powder. Mix well.
  • Divide the Litti dough into small lemon-sized balls. Flatten each ball with your palms and place a spoonful of the Chokha filling in the center.
  • Seal the dough and reshape it into a ball.
  • Heat a tawa (griddle) on a gas stove over medium heat. Place the stuffed Littis on the tawa and cook them evenly on all sides, applying gentle pressure with a spatula, until golden brown and crisp.
  • Remove the cooked Littis from the tawa and serve hot.
  • Garnish the Litti Chokha with fresh coriander leaves and serve it with ghee.
