  • 1 onion, finely chopped

  • 1 tomato, finely chopped

  • 1 carrot, finely chopped

  • 1 green chili, finely chopped

  • 1 tbsp grated ginger

  • 1/2 tsp mustard seeds

  • 1/2 tsp cumin seeds

  • 1/4 tsp turmeric powder

  • 1/4 tsp red chili powder

  • Salt to taste

  • 2 cups water

  • 2 tbsp oil

  • A handful of chopped coriander leaves for garnishing

Directions

  • Rinse the millet in water and soak it for 10-15 minutes. Drain the water and keep it aside.
  • Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.
  • Add onions and sauté until they turn golden brown.
  • Add grated ginger, green chili, chopped tomatoes, and carrots. Mix well.
  • Add turmeric powder, red chili powder, and salt. Mix well.
  • Add the soaked millet and mix everything together.
  • Pour 2 cups of water into the pan and give it a stir. Cover the pan with a lid and let it cook for 15-20 minutes on low flame or until the water is absorbed and the millet is cooked.
  • Turn off the heat and let the upma sit for 5 minutes.
  • Garnish with chopped coriander leaves and serve hot.

Quick Notes

  • Rinse the millet grains thoroughly before using to remove any dirt or debris.
  • You can use any vegetables of your choice such as carrots, beans, peas, or corn.
  • Adjust the spice level as per your preference.
  • Make sure to stir the upma continuously while adding the millet grains to prevent clumps.
  • You can also add roasted peanuts or cashews for a crunchy texture.
  • Leftover upma can be refrigerated and reheated the next day.
  • For a vegan version, skip the ghee and use oil instead.
  • You can also add a squeeze of lemon juice for a tangy flavor.
