  • 2 cups chickpeas (canned or soaked and boiled)

  • 2 medium onions, finely chopped

  • 3 medium tomatoes, pureed

  • 2 green chilies, finely chopped

  • 3 cloves of garlic, minced

  • 1-inch piece of ginger, grated

  • 2 teaspoons cumin seeds

  • 2 teaspoons coriander powder

  • 1 teaspoon turmeric powder

  • 1 teaspoon red chili powder (adjust to taste)

  • 1 teaspoon garam masala

  • 1 teaspoon amchur powder (dried mango powder)

  • Salt to taste

  • 2 tablespoons oil

  • Fresh cilantro leaves for garnish

  • Lemon wedges for serving

Directions

  • Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter.
  • Add chopped onions and sauté until golden brown.
  • Add minced garlic, grated ginger, and green chilies. Sauté for a minute until fragrant.
  • Add turmeric powder, coriander powder, and red chili powder. Mix well and cook for a minute.
  • Add tomato puree, salt, and cook until the oil separates from the masala.
  • Add boiled or canned chickpeas and mix well to coat them with the masala.
  • Add garam masala and amchur powder. Stir to combine.
  • Reduce the heat to low, cover the pan, and simmer for about 15-20 minutes, allowing the flavors to meld together.
  • Adjust the consistency by adding water if needed. Simmer for a few more minutes.
  • Garnish with fresh cilantro leaves.
  • Serve hot with chapatis, naan, or rice. Squeeze some fresh lemon juice over the Chana Masala before serving for an extra tangy kick.
