1 onion, diced
2 cloves of garlic, minced
2 medium carrots, diced
2 celery stalks, diced
1 medium potato, peeled and diced
4 cups of vegetable broth
1 can of diced tomatoes
1 tsp dried thyme
Salt and pepper to taste
1 tbsp olive oil
Directions
