6 Sandwiches for a Summer Picnic Lunch

One of the best parts of summer is spending the day at the beach or park with friends and family. And no summer day is complete without a picnic lunch.

We’ve rounded up some great sandwich ideas to help you make an amazing lunch!

Beef Tenderloin & Caramelized Onion Open-Face Sandwich

This epic sandwich takes a bit of prep work, but so worth it in the end. You’ll be the envy of the picnic. And, for better or worse, you’ll probably get invited to the next one.

Ingredients:

  • 1 tbsp vegetable oil
  • 2 pounds beef tenderloin
  • Coarse salt
  • Ground pepper
  • 1 tbsp lemon juice
  • ¾ cup mayonnaise
  • White onion
  • 1 tsp olive oil
  • ½ tsp sugar
  • Baguette – cut horizontally and into three sections

To Make:

  1. Heat oil in an oven safe skillet on medium high
  2. Season beef with salt and pepper
  3. Cook beef on skillet, browning on all sides (approx. 10 minutes)
  4. Heat oven to 425°F
  5. Transfer skillet to oven and cook for 20-25 minutes – until beef is medium-rare
  6. Let rest for 20 minutes before cutting into ¼ inch slices
  7. Slice onion
  8. Heat olive oil in a sauté pan on medium high
  9. Add onion and stir to coat with the oil
  10. Reduce heat to medium low and let cook for 10 minutes, stirring occasionally
  11. Sprinkle with salt and sugar, stir and cook for 45-60 minutes, stirring occasionally
  12. After 30 minutes, add a tsp olive oil and stir in
  13. Remove from heat, and set aside to cool
  14. In a small bowl mix together mayonnaise, lemon juice, salt and pepper (to taste)
  15. Spread mayonnaise onto each baguette slice, top with beef
  16. Wrap each sandwich in parchment paper and tie with string
  17. Add caramelized onions right before serving
  18. Serve and enjoy!

 

Chicken and Marinated Zucchini

Level up your sandwich with marinated zucchini. It’s so easy to do, you may find yourself making this sandwich everyday. And you can make the marinated zucchini and chicken breasts the night before, so all you have to do in the morning is put the sandwich together.

Ingredients:

  • 1 zucchini
  • ¼ red onion – thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt
  • Pepper
  • Chicken breasts
  • ¼ tsp chilli powder

To Make:

  1. Use a vegetable peeler to make ribbons with the zucchini
  2. In a bowl, mix zucchini, red onion, olive oil, lemon juice, salt, and pepper
  3. Let sit for 30 minutes
  4. In a small dish mix together chilli powder, a pinch of salt and pepper
  5. Season chicken breasts
  6. Pan fry or broil chicken until cooked through
  7. Let cool and cut into medium thick slices
  8. Place chicken strips and marinated zucchini onto your bread or bun of choice
  9. Serve and enjoy!

 

Tuna Sandwich

Don’t be fooled, this isn’t your basic tuna sandwich. Because your tuna sandwich deserves to be fancy every so often.

Ingredients:

  • 3 tbsp olive oil
  • 2 tbsp white-wine vinegar
  • 1 tbsp Dijon mustard
  • Salt & peper
  • 2 can tuna
  • 1/3 cup red onion – diced
  • Avocado
  • Arugula
  • Fresh basil
  • Baguette

To Make:

  1. In a small bowl whisk together oil, vinegar, mustard and a pinch of salt and pepper
  2. Combine dressing with tuna and onion
  3. Cut your baguette horizontally and then into three sections
  4. Spread tuna mixture onto your baguette, add Avocado slices, arugula, and a few basil leaves
  5. Close the sandwich
  6. Serve and enjoy!

 

Turkey Ciabatta

Ciabatta has to be the most fun bread to say. It’s also really crispy and has a nice flavor. This simple sandwich is packed with the fresh flavors of summer.

Ingredients:

  • Ciabatta bread
  • Olive oil
  • Turkey breast
  • Salt & pepper
  • Soft mozzarella – sliced
  • Tomato – sliced
  • Fresh basil

To Make:

  1. Cut your ciabatta bread horizontally, brush lightly with olive oil, and toast on grill on in the oven for 5-10 minutes until edges begin to darken just slightly
  2. Season turkey breast with salt and pepper
  3. Cook in frying pan or broil until cooked through
  4. Slice turkey breast in half horizontally
  5. Layer sandwich with turkey breast, mozzarella, tomato, and basil
  6. Close the sandwich
  7. Serve and enjoy!

 

Salami & Cream Cheese Wrap

Wait, what? I thought this was all about sandwiches? Well, time to think outside the picnic basket. We like to think of wraps as rolled sandwiches, with skinny bread.

Ingredients:

  • Salami slices
  • Cream cheese
  • Cucumber
  • Grainy mustard
  • Tortillas

To Make:

  1. Spread a layer of cream cheese down the middle of the wrap
  2. Add salami slices, as thin or thick as you prefer
  3. Spoon on a little mustard
  4. Cut cucumber into match-like sticks and place on top
  5. Tightly roll tortillas, tucking in ends
  6. Serve and enjoy!

 

Sweet Potato Avocado Wrap

This vegan wrap is packed with flavor. The spicy chilli/cumin combo is balanced with rich avocado. And with so many ingredients that are good for you, you don’t need to feel guilty about having another.

Ingredients:

  • Yam Fries
  • Cumin powder
  • Chilli powder
  • Avocado
  • Onion – sliced
  • Spinach
  • Canned chick peas
  • Lime wedge
  • Tortillas

To Make:

  1. Season yam fries with cumin and chilli powder
  2. Cook as per directions on packaging
  3. Let cool
  4. Cut avocado into long slices, and lay onto tortilla wrap
  5. Add onion, spinach, chick peas and yam fries
  6. Squeeze fresh lime juice over the wrap
  7. Tightly roll tortillas, tucking in ends
  8. Serve and enjoy!
