4 Chocolate Cake Recipes Every Baker Must Know

There are numerous recipes that experienced bakers, and chefs, should know. However, far too many people who start their own bakery business or get into this career don’t know some of the most basic recipes.

It’s great to want to bake cookies, cupcakes, and muffins and that may very well be a prime product for your customers, but there are still going to be times when people come into your bakery or contact you by phone (or go online to email you) and request some other items you may not bake on a regular basis.

What would you tell them if you didn’t have the skills or knowledge about how to make certain chocolate cake recipes? “I’m sorry, but I just don’t do chocolate cakes”?

You don’t have to, as long as you know some basic chocolate cake recipes that every baker should know. Here are four for you to whet your appetite.

Black Magic Cake


What you will need:

  • 1 ¾ cups flour.
  • 2 eggs.
  • 1 cup of brewed coffee, preferably strong.
  • 1 cup of buttermilk.
  • 2 cups of sugar.
  • ¾ cup unsweetened cocoa powder.
  • ½ cup vegetable oil.
  • 2 teaspoons of baking soda.
  • 1 teaspoon of vanilla extract.
  • 1 teaspoon of salt.
  • 1 teaspoon of baking powder.

How to prepare:

Preheat the oven to 350°F and grease two 8 to 9 inch round cake pans and also add flour to them. Combine the flour, sugar, baking soda, baking powder, salt, and cocoa in a large bowl and then create a small well in the center.

Add in the eggs, coffee, oil, vanilla, and buttermilk and beat for two minutes on a medium setting. This will thin out the batter and you will then pour it into the prepared pans.

Bake it for 30 to 40 minutes and test as you would other baking products. Allow it to cool for 10 minutes and then remove from the pan and place on a wire rack. Fill and frost it as desired.

Dark Chocolate Cake


What you will need:

  • 2 eggs.
  • 2 cups sugar.
  • 2 cups all-purpose flour.
  • 1 cup of brewed coffee.
  • ¾ cup unsweetened cocoa.
  • 1 cup of milk.
  • 2 teaspoons of vinegar.
  • 2 teaspoons of baking soda.
  • ½ cup vegetable oil.
  • 1 teaspoon baking powder.
  • ½ teaspoon of salt.

How to prepare:

Preheat the oven to 350°F and grease and add flour to a 9 x 13” pan.

Combine flour, sugar, baking soda, cocoa, baking powder, and salt in a large bowl. Add in the eggs, coffee, oil, vinegar, and milk and blend until smooth. Pour the batter into the prepared pan.

Bake in the oven for 35 to 40 minutes, remove, and allow to cool. Add any type of frosting you’d like.

Microwavable Mississippi Mud Cake


What you will need:

  • 1 cup of butter.
  • ¼ teaspoon of salt.
  • ½ cup of miniature marshmallows.
  • 2 cups of sugar.
  • ½ cup butter.
  • ½ cup cocoa powder, unsweetened.
  • 1/3 cup of milk.
  • 4 eggs.
  • 2 teaspoons of vanilla extract.
  • ½ teaspoon vanilla extract.
  • ¼ cup cocoa powder, unsweetened.
  • 1 ½ cups all-purpose flour.
  • ¼ cup walnuts, chopped up.
  • 4 cups of confectioners’ sugar.

How to prepare:

Place 1 cup of butter into a large mixing bowl and microwave on high for 1 to 1 ½ minutes. Add 2 cups of white sugar and cocoa, then the eggs and vanilla, and beat vigorously until it is well blended. Next you’ll want to add the flour, nuts, and salt. Allow the batter to rest for 10 minutes.

Pour it into a 12 x 8 pan and then place on a plastic trivet in the microwave oven. Microwave it on medium heat for nine minutes. Rotate the dish after three minutes.

The top should be mostly dry with moist spots on it. Add marshmallows over the top and let it stand for five minutes until those marshmallows begin to melt.

The frosting: Melt ½ cup of butter in a large bowl and then stir in 1/3 cup of milk, ½ teaspoon of vanilla, and ¼ cup of cocoa. At 4 cups of confectioners’ sugar and beat vigorously. It should become smooth and then you’ll spread this over the marshmallows and allow it to stand on a flat surface for 30 minutes.

Flourless Chocolate Cake


What you will need:

  • 4 squares of semisweet chocolate, chopped up.
  • 3 eggs, beaten.
  • 1 teaspoon of vanilla extract.
  • ½ cup cocoa powder.
  • ½ cup butter.
  • ¾ cup white sugar.

How to prepare:

Preheat the oven to 300°F and grease a round cake pan, preferably 8 inches. You can dust it with the cocoa powder.

Over lightly simmering water in a double boiler, melt the chocolate and butter together. Once melted, remove it from the heat and add the sugar, eggs, vanilla, and cocoa powder. Pour this into the prepared pan.

Bake it for 30 minutes and then allow it to cool for 10 minutes. Turn it over onto a right wire rack to allow it to cool completely.
